Should I do anything special here to rotate the Default client for  a particular project? eg. create a new one and delete the old one? or should I just edit the existing default one? How does it know which ClientApplication is currently in use if there are two?

went ahead and rotated it via editing the existing one because I couldn't find a way to create. I think its working
